Carrot Cake with Cream Cheese Frosting
Cake Ingredients:
1 lb. Carrots - peeled and blended
1 c. Oatmeal
½ c. Almond flour
½ c. Coconut
1 Tbsp. Cinnamon
2 tsp. Pumpkin Pie Spice
1 tsp. Salt
1 Tbsp Baking Powder
1 tsp Baking Soda
8 Eggs
2 tsp. Vanilla Extract
½ c. Applesauce (or Butter)
¾ c. Maple Syrup
Frosting Ingredients:
16 oz container Cottage Cheese
2 tsp. Vanilla Extract
1 tsp. Almond Extract
1 tsp. Stevia (or other sweetener)
Directions:
- Preheat oven to 350 degrees
- Spray 9x13 pan with cooking spray
- Peel & chop up carrots into large chunks and place in food processor. Process carrots in a blender until almost smooth
- Add remaing cake ingredients in food processor & blend
- Pour mixture into the 9x13 pan
- Bake for 35-40 minutes untill knife comes out clean
- While cake bakes, combine frosting ingredients into a cleaned food processor & blend until creamy. Taste to test and if needed, add more sweetener. Once satisfied with frosting taste, please in a container and in the refrigerator.
- Once cake is doneā¦.cool.
- Top cake with frosting.
